Diamond Biscuits, also known as Sweet Maida Biscuits, Kalakala, or Shakarpara, are one of the most popular traditional homemade snacks enjoyed across India π. These crispy, crunchy diamond-shaped biscuits are especially loved by children and are often prepared during festivals, holidays, and special occasions.

In this recipe, letβs see how to make crispy Diamond Biscuits at home in a few easy steps.
Preparing the Sugar Powder
In a mixer jar, add Β½ cup of sugar.
Grind it into a fine powder and keep aside.
Making the Dough
In a wide bowl, sieve 1Β½ cups of maida using a strainer.
Add the ground sugar powder and 3 tablespoons of ghee.
Note: Adding ghee is very important as it helps make the biscuits crispy. Without ghee, the biscuits may turn hard.
Add ΒΌ tsp of salt and mix everything well.
Add water little by little and form a thick dough.
Knead the dough well for 3β5 minutes.
Once done, add a little ghee and spread it all over the dough.
Close with a lid and rest the dough for 5β10 minutes.
Shaping the Diamond Biscuits
After resting, place the dough on a clean working surface.
Knead it well and divide the dough into three portions.
Sprinkle some flour and roll the dough into a thick sheet.
Once rolled, cut the dough into straight strips.
Then cut the strips crosswise to form diamond shapes.
Ensure all pieces are of similar size.
Repeat the same process with the remaining dough portions.
Collect all the cut diamond pieces on a plate.
Frying the Biscuits
Heat a kadai and pour the required amount of oil.
Once the oil is hot enough, gently drop the diamond pieces slowly.
Deep fry on medium-low flame, turning in between for even cooking.
Once the biscuits turn golden and crispy, remove them from the oil.
Fry the remaining pieces in the same manner.
