Eelaneer Payasam, also known as Tender Coconut Payasam or Nariyal Ke Kheer, is a light, creamy, and refreshing South Indian dessert made using fresh tender coconut and milk π₯₯π΄π₯.
Made with just three simple ingredients, this dessert highlights the natural sweetness and flavour of tender coconut, making it a favourite across all age groups π.
In this recipe, letβs see how to make Eelaneer Payasam at home in a few easy steps.
(You may also use toned milk or any other milk available, but full-cream milk gives the best results.)
Keep a few small pieces aside and grind the remaining coconut flesh in a mixer jar, adding the tender coconut water.
Grind until it becomes a smooth paste.
Cut the reserved soft coconut flesh into small pieces, collect them in a bowl, and keep aside.
Pour the milk into a pan and bring it to a boil.
Once it boils, lower the flame and stir continuously.
Make sure to scrape and add back the cream (malai) that forms on the sides of the vessel for extra richness.
When the milk becomes slightly thick, add the ground tender coconut paste and keep stirring.
Add sugar to the milk and continue stirring for 10β15 minutes.
After 2β3 minutes, add the chopped tender coconut pieces, mix well, and switch off the stove.
Cover the pan with a lid, keeping it slightly open.
Allow the payasam to come to room temperature, then place it in the refrigerator.
