Chettinad Chicken Fry, is a South Indian delicacy, that has found its place on many menus across the world. Spicy Sensation for Your Taste Buds! πŸ—πŸ”₯

Ingredients:

Chicken - Β½ kg

Til oil - 3-4 tbsp

Small onion (chopped) - 100 g

Green chilli (chopped) - 2

Curry leaves - 2 bunch

Salt - as per taste

Ginger garlic paste - 1 tbsp

Turmeric -ΒΌ tsp

Coriander leaves (chopped) - 1 cup

Preparation Method:

Heat the pan

Turn the flame to medium-low and add 7-8 Nos of red chilli

2 inches of cinnamon (dalchini) and mix well

Add 1 tbsp of coriander seeds

Β½ tsp of cumin (jeera)

Two cardamom (elaichi)

1 tsp of pepper and mix it well.

Once roasted, spread it on a plate and leave it to cool.

In a mixer jar, add the chilli mix and grind to a fine powder

Heat the pan and add 3 tbsp of til oil

To Grind:-

Red chilli - 7-8 No

Cloves (laung) - 4-5

Cinnamon (dalchini) - 2 inch

Coriander seeds - 1 tbsp

Cumin (jeera) - Β½ tsp

Cardamom (elaichi) - 2

Pepper - 1 tsp

Once grounded, collect in a bowl. Close with the lid and keep aside.

2 (chopped) green chilli and two bunch of curry leaves

100 g of (chopped) small onion and mix

Salt as per taste

1 tbsp of ginger garlic paste and add ΒΌ tsp of turmeric

Mix it well till the onion turns soft

Add Β½ kg of chicken

Mix it well and turn the flame to medium-low and close with the lid. Cook for 8-10 minutes

Add salt as per taste and close with the lid

We cook the chicken dry without adding water Still, the chicken oozes the oil and water;

let the chicken cook with its oil and water in medium-low flame

Close with the lid.

Once the chicken becomes soft, Add 2 tbsp of the grounded powder

Mix it well. Close with the lid and cook for 5-8 minutes.

Add 1 cup of (chopped) coriander leaves

Close with the lid.

That's it. Your "chettinad chicken dry" is ready.
