Tirumular

Take the white soft fleshy inner layer of the tender coconut in a bowl. Keep a few small pieces.

Once boiled, lower the flame and stir continuously.

Pour the milk into a pan and bring it to a boil.

I have used full cream milk for this Tender Coconut Kheer recipe.

Grind the balance in a mixer jar

add the tender coconut water

Grind till it becomes a paste

Add sugar to the milk. Keep stirring for 10-15 minutes; ensure you remove the cream/malai formed on the top sides of the vessel and add it in.

When the milk gets a little thick,

add grounded coconut and keep stirring.

After 2-3 minutes, add chopped coconut. Mix well and switch off the stove.

Cover with a lid slightly open.

When it gets to room temperature, keep it inside the refrigerator. Serve cold, and enjoy.

That's it. Your "elaneer payasam" is ready.
