How to make paneer at home | Cottage Cheese | homemade paneer easy step by step | without vinegar or lime juice

Paneer/Cottage Cheese, is the most popular cuisine of the Indian subcontinent, soft cheese made by curdling full-fat buffalo or cow milk. With this "paneer" recipe! You can make many delicious dishes like Paneer Tikka, Panner chilli, Shahi Paneer, Palak Paneer, Paneer butter Masala, Kadai Paneer and much more at home, as tasty as it would taste in a restaurant.

Ingredients:

Full Cream Milk - 1 litre

Curd - 4 tbsp

Preparation Method:

Note:- It's best to use full cream milk. (You can use Toned milk or any other brand of milk you have).

I used full cream milk for this Paneer recipe.

Normally people would suggest vinegar or lime juice to curdle the milk. But trust me, by adding curd will give you a very fluffy and soft Paneer without the sour taste.

Pour the milk into a vessel and bring it to a boil.

Once it boils, low the flame to medium and pour 1- tbsp of curd into the milk.

Keep on stirring

In every two min gap, keep adding one by one tbsp of curd to the milk

The milk will now start to ferment.

Turn off the stove once the paneer separates from the whey.

Let it rest for 5-10 min.

Next, strain the paneer with cheesecloth and rinse with cold water 3-4 times.

Gather the ends of the cloth, then squeeze the excess liquid

Press the paneer to release more liquid.

Next, find two plates, and place one plate upside down.

On the inside of the other plate, place the paneer with the cloth.

Spread it and fold the cloth.

Fold and cover the cloth all over the paneer to give it a good shape

Once the cloth is folded well without shrinking, turn the paneer plate upside down

Then, place a heavy vessel or weight on top of the plate and leave for 20-30 min.

I have placed a 5 kg weight for 15-20 min.

It will stay fresh for 4-5 days in the chiller tray.

Little fry with oil before adding it to any recipe you make.

That's it. Your super soft "Paneer" is ready.

Note:- you can get around 200 grams of paneer from 1 liter of milk.
