How to make Surul Poori | Surul Puri | Pathir Patheni | chiroti | Sweet Recipe
A very popular and traditional South Indian dessert dish.


Surul Puri, is very popular & traditional South Indian dessert dish, Made with common flour, ghee (clarified butter) and powdered sugar or sugar syrup. A crispy thin layered sweet surul puri usually prepared during Diwali Festivals and special occasions. Absolutely Delicious.
Ingredients:
Maida - 400 gm
Salt - Β½ tsp
Soda powder -Β½ tsp
Rice flour - 2 tbsp
Ghee - 3 tbsp
Oil - 1 tsp


Preparation Method:
In a bowl, sieve maida/ all-purpose flour with a strainer,


Add Β½ tsp of salt


1/2 tsp of cooking soda


1 tbsp of oil


Add Β½ cup of water (add more or less as per required)


Mix the dough thick (as thick as poori dough)
Mix the flour nicely for 5 - 10 mins




When the dough is well-mixed spread oil all over the dough and over it nicely and keep it aside for 15 min


Take a small bowl and add 2 tbsp of rice flour


3 tbsp of ghee and mix well to make a thin paste


Later remove the dough from the bowl.


Place the dough in the working area and knead well for 5 mins
After kneading, cut the dough into pieces


Roll the pieces into balls and keep them aside
Spread all the balls / small dough into a thin round shape as we do for chapati


Once done, take one piece & place it in the working area




Then spread the rice flour mix with the oil brush on top of it all over


Take another piece, place it on top of it


Apply the rice flour mix all over Do the same for three more and make five layers
Once you place the 5th layer, spread the layers softly to become a big round chapathi


Then apply the rice flour mix all over and roll from one end firmly


Once done with the rolling, cut it into pieces and keep them aside




Place the rolled surul poori dough in the working area Spread gently into a small thick round shape as we do for chapati
Make all the surul poori dough the same as described


Next, Heat the oil in a Kadai. Take a spread surul poori dough and drop it slowly into the oil.


Deep fry, turn over in between


Once well fried, remove it from the oil


Once all surul poori is fried Place it in a bowl and sprinkle the icing sugar (powdered sugar).


Once poori is coated well with the sugar, transfer it to the airtight container for later use or place it on the serving plates and enjoy.
Instead of powdered sugar, you can also dip it in sugar syrup.


Note:- Making of sugar syrup, In a pan, add Β½ cup of sugar and ΒΌ cup of water and bring it to boil. Once the syrup turns into little thick, switch off the stove. Add the fried surul poori to the sugar syrup and pour the syrup all over. Once it is well-coated, transfer it to the airtight container for later use or place it on the serving plates and enjoy.


That's it. Your "surul poori" sweet is ready.
