Surul Poori, also known as Surul Puri, Pathir Patheni, or Chiroti, is a classic South Indian sweet delicacy. This crispy, thin-layered dessert is made using simple pantry ingredients like maida, ghee (clarified butter), and sugar.

Ingredients
Maida (All-purpose flour) β 400 g
Salt β Β½ tsp
Cooking Soda β Β½ tsp
Rice Flour β 2 tbsp
Ghee β 3 tbsp
Oil β 1 tsp

Traditionally prepared during Diwali, festivals, and special occasions, Surul Poori is loved for its beautiful spiral layers, light crunch, and rich taste. Whether coated with powdered sugar or dipped in sugar syrup, this sweet is absolutely irresistible π.
Letβs see how to make Surul Puri at home using simple ingredients.
Step 1: Preparing the Dough
In a large bowl, sieve the maida (all-purpose flour) using a strainer.
Add Β½ tsp salt, Β½ tsp cooking soda, and 1 tsp oil.
Add Β½ cup of water gradually (adjust as required).
Knead the dough to a thick consistency, similar to poori dough.
Mix the dough well for 5β10 minutes until smooth.
Once mixed, apply oil all over the dough, cover it, and keep it aside for 15 minutes to rest.












Step 2: Preparing the Rice FlourβGhee Paste
Take a small bowl, add 2 tbsp rice flour and 3 tbsp ghee.


Mix well to form a smooth, thin paste. Keep aside.


Step 3: Layering the Dough
After resting, remove the dough and place it on the working surface.
Divide the dough into equal portions, roll them into balls, and keep aside.
Knead again for 5 minutes.








Roll each ball into a thin round disc, similar to chapati.






Apply the rice flourβghee paste evenly using an oil brush.




Place another disc on top and apply the paste again.


Repeat the process and layer five discs in total.


After placing the fifth layer, gently spread them to form a slightly larger chapati.
Apply the rice flour paste again on top and roll tightly from one end.
Cut the rolled dough into equal pieces and keep aside.




Take each cut piece and gently roll it into a small, thick disc.
Prepare all the Surul Poori discs in the same manner.


Step 4: Frying the Surul Poori
















Heat oil in a kadai over medium flame.
Carefully drop one prepared Surul Poori disc into the hot oil.




Deep fry, turning occasionally, until golden and crisp.


Remove from oil and drain excess oil.


Fry all the Surul Pooris the same way.


Step 5: Coating with Sugar
Place all the fried Surul Pooris in a bowl.


Sprinkle icing sugar (powdered sugar) generously.


Mix gently until all pieces are well coated.
Transfer to an airtight container for storage or place on a serving plate and enjoy.








Alternative Method: Sugar Syrup Coating π―
Instead of powdered sugar, Surul Poori can also be coated in sugar syrup.
Note: Sugar Syrup Preparation
In a pan, add: Β½ cup sugar, and ΒΌ cup water.


Bring it to a boil.
Once the syrup becomes slightly thick, switch off the stove.
Add the fried Surul Pooris to the syrup and pour the syrup evenly over them.
Once well coated, transfer to an airtight container or serve immediately.
